Is the Tojiro DP a good first Japanese knife?
It is the common entry point: VG10 core, ~60 HRC per the listings, at a simpler finish than Damascus lines.
Which length?
9.4" (24 cm) is the classic full-size; go 7" for small boards, 10.5" for long slicing.
Can I put it in the dishwasher?
Hand-wash and dry promptly; check the maker's instructions.
